Apfelkuchen, supersaftig

Zutaten

150 g Butter oder Margarine

125 g Zucker

5 Ei(er)

125 g Haselnüsse, gemahlen

50 g Mehl

2 TL Backpulver

1 TL Zimt

800 g Äpfel z. B. Elstar, grob gerieben

½ Tasse Zucker

1 Zitrone(n), Saft davon

2 EL Vanillepuddingpulver

2 Becher süße Sahne, je 200 g

Kakaopulver zum Bestäuben

 

Zubereitung

Aus Butter, 125 g Zucker, 3 Eiern, Nüssen, Mehl, Backpulver und Zimt einen Rührteig erstellen und bei 160°C Umluft ca. 30 min. backen. Das kann auch am Vortag geschehen.

Die geriebenen Äpfel mit dem Zucker, den restlichen 2 Eiern, dem Zitronensaft und dem Puddingpulver unter ständigem Rühren einmal richtig aufkochen.

Etwas auskühlen lassen, dann auf dem in einer Springform liegenden Kuchenboden verteilen. Kühl stellen.

Die Sahne steif schlagen, auf dem Kuchen verteilen und glatt streichen. Etwas Kakaopulver drüber sieben.
